Go to your profile, click on the Photos tab, then select the album you want to make private. Click the little pencil icon for 'Edit,' then change the privacy setting to 'Only Me.' Voilà, your secret's safe!

Honestly, it's simpler to just delete the photos if you don't want anyone to see them.
Just a heads up, you'll have to change the privacy settings for each album individually. No mass privacy change for photos, unfortunately!
I've done this! Go to Photos, click on each album, hit the pencil icon to edit, and then set the audience to 'Only Me.' Repeat for each album.
