From the Roku home screen, go to Settings > Accessibility > Captions mode and set it to 'Off'. Easy peasy!

Just press the * button on your Roku remote while watching a video, go to 'Closed Captioning' and select 'Off'. Boom, done!

I felt like I was watching a silent movie with subtitles before I figured this out. During playback, hit the * button, navigate to 'Closed Captioning' and toggle it off.
