You can just mute conversations instead of turning chat off entirely. Might be a better option.
From my experience, the quickest way is to click the Messenger icon at the top, go to Preferences, and hit 'Turn Off Active Status'!
Just click on the Messenger icon, hit the gear icon for settings, and select 'Turn Off Active Status'. Easy peasy!
