You'll wanna go to the Epic Games website, sign in, click on your username, navigate to 'Account', then 'Connections', then 'Accounts', and finally 'Disconnect' next to PSN. Boom, done!

From personal experience, go to the Epic Games account settings on their website, find 'Connections', and hit 'Disconnect' under the PSN section. Worked for me like a charm!
