Go to the Epic Games website, log in to your account, and navigate to the 'Connected Accounts' section. Find your PlayStation Network account and click 'Disconnect'. Easy peasy!

Open Epic Games in your browser, log into your account, click on your profile name in the top right, and select 'Account.' From there, go to 'Connections', and under 'Accounts', click 'Disconnect' next to your PlayStation Network. Done and done!

I had to go through this a few months ago. Log into Epic Games' site, hit 'Account', then 'Connections', and just disconnect from there. Worked like a charm for me!
