Just head over to 'Account Management' on your PS4 or PS5, navigate to 'Account Information' > 'Wallet' > 'Payment Methods,' and hit that remove button next to PayPal.

Honestly, the easiest way is to log into your PSN account on a web browser, go to 'Payment Management,' and unlink PayPal from there. Took me all of 2 minutes!
