Go to the post or photo, click on the tag icon, and just select 'Remove Tag' next to the person's name. Done and done.

Simply open the post, click on the three dots in the top right corner, select 'Edit Post,' and click the 'x' next to the person's name to untag them. Easy peasy!
I do this all the time! Just click on the post, tap the three dots, choose 'Edit Post,' then hit the 'x' beside the name you want to untag.
You can also just hide the post from your timeline if that's easier for you. Sometimes it's better to keep it simple.
