To untrack resources, just open your inventory, find the resource, and hit the 'Untrack' button. Easy peasy!

Go to your resource management screen, select the resource you want to untrack, and click 'Untrack'. Hope that helps!

From personal experience, just head to the tracking screen, select the resource you're tired of tracking, and deselect it. Simple as that!
