You need to connect to Xbox Live. Once connected, start your game, and it'll automatically check for updates. If there's an update, follow the on-screen instructions!

For the best experience, connect your Xbox 360 to the internet via Ethernet or Wi-Fi. Once online, launching any game will trigger the update prompt automatically. Personal experience: I do this all the time, and it works seamlessly!

Updates aren't really worth it unless you're playing online. Just pop in the game, and if it needs an update, it'll let you know.
