Becoming a cop in GTA 5 isn't a feature built into the game's standard gameplay; however, there's a creative workaround. You can steal a police car (which is half the fun), to get the police uniform and pretend to be a cop. For a more immersive experience, mods like the LSPD First Response mod (LSPDFR) on PC totally transform the game, allowing you to take on the role of a police officer, respond to incidents, and enforce the law. Remember, mods are only available on the PC version!

Honestly, just grab a cop car and go wild. The game doesn't officially let you be a cop, but where there's a will, there's a way!

Mods, mods, mods. LSPDFR is the way to go if you're on PC. Turns the game into an almost entirely new experience where you're the law.
