Short answer: You can't, not officially at least. GTA V doesn't let you become a cop as a career. But hey, that's what mods are for. Check out some custom mods out there that let you role-play as a cop. It's like the unofficial expansion pack you never knew you needed.

Oh, you wanna join the virtual thin blue line, huh? In GTA V, you can't officially become a cop through regular gameplay or career paths like in some RPGs. However, you can sort of role-play as a cop by stealing a police car and starting vigilante missions.
