On PC, you can download the "LSPD First Response" mod (LSPDFR) that allows you to take on the role of a police officer, complete with missions, traffic stops, and more. Been playing as a cop in GTA 5 for years thanks to the LSPDFR mod. It completely changes the game, making it feel like a whole new experience. You get to respond to crimes, pull over suspicious vehicles, and much more. It's like the police sim we never got officially. Highly recommend giving it a try if you're on PC!
