You can't. Once mana is in your pool, you gotta use it or lose it when the phase ends. Be careful with those clicks!
If you accidentally tapped mana in MTG Arena and haven't used it to cast a spell or ability, just right-click on the mana symbols in your mana pool. This will untap them and return them to their untapped state, as long as you haven't finalized any actions yet!
