You don't catch a Stalker; you avoid it unless you want a nibble taken out of you!
Just drop some metal salvage near a Stalker and watch it go for it like a kid after candy. Then, grab it with your Propulsion Cannon or sneak up with your Survival Knife!
I've found that luring Stalkers with metal salvage works like a charm. Once distracted, either gather their teeth or use your Propulsion Cannon to manage them. Just be quick and careful!
