You can't really change your player's position directly in MLB The Show 21. You need to talk to your manager in Road to the Show mode and request a position change. Good luck convincing them!
From personal experience, the easiest way is to keep performing well and eventually have a conversation with the manager about switching positions. It worked for me!
Honestly, it's not worth the hassle. Stick to your assigned position and focus on improving your stats!
