You can't change your date of birth directly on PSN once it's set. But you can contact PlayStation Support and they'll help you out—just be prepared to provide some ID!
Good luck! You can't change your date of birth on PSN yourself. Reach out to support if you really need to.
From my experience, you have to call PlayStation Support for this. I had to show them my ID before they made any changes.
