Did it last week! Go to the Xbox app, tap on your profile, then 'Customize', and you'll see the option to change your Gamertag. Super straightforward.

You can change your Gamertag directly from your Xbox console! Press the Xbox button, go to Profile & system > Settings > Account > Personal info > My profile > Customize profile, and then select your current Gamertag to change it.
