Head to your PS5 console, go to 'Settings' > 'Users and Accounts' > 'Account' > 'Profile' > 'Online ID', and follow the prompts. Easy peasy!

You can also do it online via a web browser: Log in to your PlayStation Network account, go to 'Profile', and click the edit button next to your Online ID.
