Just rename your Eevee to one of these names before evolving: Pyro for Flareon, Sparky for Jolteon, Rainer for Vaporeon, Sakura for Espeon, Tamao for Umbreon, Linnea for Leafeon, Rea for Glaceon, or Kira for Sylveon. It works once per evolution!

If you're aiming for Espeon or Umbreon without using the name trick, walk your Eevee as a buddy for 10 km and then evolve it during the day for Espeon or at night for Umbreon.

Rename tricks only work once, then it's either random or you need specific methods like lures and buddy walks.

For Leafeon and Glaceon, just use a Mossy Lure or a Glacial Lure module at a PokéStop and evolve your Eevee while near it.
