Just hit the delete button on your interface while targeting the beacon. Don't worry, it won't explode (I hope)!
You can't delete outpost beacons in Starfield, but try moving them instead.
From personal experience, you need to make sure you're not standing too far away from the beacon. Then, access your build mode, target the beacon, and poof! Press the button to dismantle it. It's as easy as removing a stray pickle from your sandwich!
