Quick and dirty method: Open Steam, right-click the game you wanna throw into the virtual bin, click 'Uninstall'. Done. Remember, it's not really goodbye, just a 'see you later'.

To delete a game from Steam, just right-click the game in your Steam library, hit 'Manage' and then 'Uninstall'. Steam will ask you to confirm, and after you do, poof, it's gone! You can always re-download it later, so no worries about losing it forever.

Honestly, why delete games? Just get a bigger hard drive. More games, more fun. But if you must, right-click and hit uninstall.
