Doing a wheelie in GTA 5 is pretty straightforward but epic to pull off! Just start speeding with your bike, then lean back on your controller by pulling the left stick back. The trick is to balance your speed and the angle you pull back to keep that wheelie going as long as possible. Practice makes perfect!

I read somewhere that if your bike's upgraded, wheelies get easier. Not sure how true it is, but after I tricked out my ride, I was definitely nailing longer wheelies. Might be worth looking into the upgrades.
