Dodging in Smash Ultimate is easy! Just press the Shield button (usually ZL or ZR), and then flick the left stick in any direction for a roll or keep it still for a spot dodge.

From personal experience, press the shield button while stationary for a spot dodge or combine it with a direction to roll. Timing is key!
