Just tap X (on Xbox) or square (on PlayStation) while aiming at the dude you're brawling with. Easy peasy.

Dodging in GTA 5 is kinda like the secret sauce to not getting knocked out in a fist fight. All you gotta do is aim at your opponent (right-click on PC, LT on Xbox, or L2 on PlayStation), then press the dodge button while moving the left stick in any direction. On PC, that dodge button is the space bar; on Xbox, it's X; and on PlayStation, it's square. Timing is everything - do it just as they throw a punch.
