To evolve Eevee into Espeon, make it happiness level maxed during the day and level it up. Easy peasy, happiness squeezy!
Simplicity itself: Max out friendship, evolve during the day, and you’ve got yourself an Espeon.
Just spend a lot of time with your Eevee! Make it happy and evolve it during the day. Worked for me!
You can actually just rename your Eevee “Sakura” in Pokémon GO and evolve it! One-time trick, but it works.
