Name your Eevee 'Sakura' before evolving it. This will guarantee an Espeon (works once per account). After that, you gotta walk that Eevee as your buddy for 10 km and evolve it during the day.

Just make sure to walk your Eevee as your buddy for at least 10 km and then evolve it during the daytime. Easy peasy!
