In standard Fortnite, you can't actually fly unless it's part of a special event or limited-time mode. If you're talking about Creative mode, there you can activate flying by opening the Build Menu and double-tapping the jump button!

You can't fly in the Fortnite Battle Royale mode, but in Creative mode, you can soar through the skies by double-tapping the jump button. Easy peasy!
