Unlock a good fruit with long-range attacks, like Light or Flame, and stay mobile. Dodging his sword strikes is key.
Pro tip: the Saber Expert can't handle it if you use a flying fruit to stay out of reach. Fly and attack from above!
I found out the hard way that spamming ranged attacks works wonders. Keep moving and wear him down bit by bit.
