You can't craft a shield in Minecraft on Xbox 360, sadly. Shields were added in the Combat Update, which the Xbox 360 edition didn't get.

Unfortunately, no shields for us Xbox 360 folks! You might need to upgrade to experience that feature.

Been playin' on the 360 forever, and nope, no shields. Gotta get a newer version for that protection!
