Click on the briefcase icon at the bottom of the screen, select your Sim's job, and hit 'quit job'.

I’ve quit a few jobs in The Sims FreePlay. Go to the Sim’s info panel, find their job, tap it, and choose 'quit job'. No two-week notice required!
