Quitting a mission in GTA 5 is pretty straightforward. If you find yourself in the thick of it and need an out, you can simply open the game menu by pressing the start button (or ESC on PC). From there, navigate to the 'Game' tab, and you'll see the option to quit the mission. Just be aware, deciding to take the easy way out might reset some of your progress in the mission. Hot take but honestly, why quit? Each mission is a chance to up your game. Stick it out, and you'll get better. Plus, you know, the satisfaction of finally nailing it is unbeatable.

I had to quit a mission once cause my cat decided it was the perfect time to demand attention. Can confirm, pausing and hitting that quit option in the menu works like a charm. Lost some progress, but hey, the cat was happy!
