Go to Settings, then Account Management, and finally Sign Out. It's as simple as that!

You can also sign out by restarting the console and selecting a different user when it boots up. It's a bit of a roundabout way, though.

From the home screen, press up on the D-pad, scroll over to Settings, and select Account Management. There you'll find the option to sign out of PSN.
