I've done this! Log in from a web browser (not the app), go to 'Edit Profile,' then choose 'Temporarily disable my account' at the bottom. Follow the steps, and it'll be deactivated until you log back in.
You basically just go to Instagram's site, log in, and disable it via 'Edit Profile.' Boom, done.
