To turn off closed captioning on Roku, press the * (star) button on your Roku remote while watching a video. Then, navigate to 'Closed captioning' and set it to 'Off'.

I used to struggle with this too. Just go to Settings > Accessibility > Captions mode, and select 'Off'.
