To unlock Pichu in Super Smash Bros Ultimate, you can either play through the World of Light Adventure Mode or encounter him during the Classic Mode runs. Just beat him once he appears!

I unlocked Pichu by going through Classic Mode with different characters until the little electric mouse showed up. Took a while but totally worth it for those adorable self-inflicted shock moves!

Just fight a bunch of battles. Pichu will eventually pop up as a challenger you need to beat. It's pretty straightforward!
