If you're on the PS app, tap on your profile icon, go to Payment Management, then Subscriptions, and turn off auto-renew. Quicker than you can say 'loading screen'!

I had to unsubscribe recently: just went to the PSN website, logged in, navigated to Account Settings, and turned off auto-renewal for PS Plus. Took like 2 minutes!
