From personal experience, I can tell you it's super easy. Just follow the prompts in both the Pokemon GO app and your Switch game (Let's Go Pikachu or Eevee).

First, open Settings in Pokemon GO and select 'Nintendo Switch.' In Let's Go Pikachu/Eevee, access your options menu and choose 'Open Pokemon GO Settings' to link them.

Both devices need to be on for the connection to establish. Go to Pokemon GO's settings, tap 'Nintendo Switch,' and then go to your Switch's settings in Let's Go Pikachu or Eevee to sync them.
