Lol, Jack is basically too stubborn to die. Dude's part fish-man, so he can breathe underwater. After his ship got destroyed, he just waited on the ocean floor. Can't keep a good (or bad, in this case) man down.

Real talk, Jack's survival comes down to his fish-man genes. He can breathe underwater, so after his defeat, he just waited on the ocean bed until help arrived. It's a wild world in One Piece, anything's possible.

So, Jack being alive is classic Oda pulling a fast one on us. Basically, Jack is part fish-man, which we found out later in the series. Because of his fish-man heritage, he can breathe underwater. So even though his ship was wrecked and he was left under the sea, he didn't drown. He just chilled on the ocean floor till he was rescued. Only Oda would come up with something like this, right?
