As long as your subscription is active, you're good to go. If you cancel, you lose access until you re-up your membership.
Your PlayStation Plus games are yours to keep as long as you maintain an active PS Plus subscription. If your subscription lapses, you'll lose access, but regain it if you resubscribe!
From my experience, I had a lapse of a few months in my PS Plus subscription. Once I resubscribed, all my games were there waiting for me.
