Trees in The Forest game don't regrow unless you have the 'Regrowing Trees' option enabled. If you do, they take about 5-6 in-game days to regrow.

You gotta enable 'Regrowing Trees' in the settings. Once that's done, trees will regrow in around 5-6 game days. Happy chopping!
