How long will Sons of the Forest be Early Access?

It's going to be early access for as long as it needs to be. Quality > Timelines!
Endnight Games hasn't set a fixed date for when Sons of the Forest will leave early access, so we're all in it for the ride!
Until it's done. Good games take time, folks!
I read on their forum that they're planning on staying in early access for around six months, but that can always change.
