Honestly, it's whatever you want! I've seen cubes that are 180 cards for quick, small drafts, and behemoths that exceed 1000 cards. It's all about how many players you regularly play with and how much variety you want. There's no magic number. Build your cube to fit your play group!

360 cards. Period. It's the perfect balance for 8 players, which is pretty standard. Anything more is just overkill and makes it harder to maintain balance.
