Honestly, as many as you can fit without turning your island into a jungle, unless that's the vibe you're going for! Just remember that each type of fruit tree (apple, cherry, orange, peach, pear, and coconut) adds a different look to your island, and more trees mean more opportunities to earn bells. I have around 30 fruit trees spaced out nicely on my island, and it works great for me!
Go wild, make an orchard! Animal Crossing is all about creating your own perfect little world. If you love the look and feel of an orchard, why not dedicate a section of your island to fruit trees? I did this and ended up with around 50 trees. Makes for a great bell-making venture and it's super satisfying to see all those trees in neat rows.
3 of each type, max. Keeps things simple and your island won't look overcrowded. Plus, it's enough to get the fruit you need for tasks and a little extra for the market.
