Just build as many as you need! But remember, more gardens mean you need more water and dwellers to keep things efficient. Balance is key.

In Fallout Shelter, there isn't a specific limit to the number of gardens you can have. Rather, it depends on how many dwellers you have and how much space you've unlocked in your vault. As long as you have the room and the dwellers to man them, you can keep building more gardens to produce food for your vault.

I've had like 10 gardens running at once, but it was overkill. You really don't need that many unless you've expanded a LOT.
