Keep enough to cover all types for battles and some of your favorites for the sentimental value. However, you should always leave enough space for catching new ones!

Keep as many as you need to have a solid lineup for raids and gyms, plus maybe some for trading.

I'd say keep a good mix of high CP and rare Pokémon. You don't need to hoard a ton of Pidgeys!
