IMO, just read the manga from Chapter 1. It’s faster, and you get the story how Oda intended. If you really wanna watch the anime, at least use a filler guide to skip the non-canon episodes.

Start with the anime from Episode 1, meticulously following the release order. Don't skip the fillers if you're a purist—every episode contributes to the charm! After catching up with the anime, jump to the manga from where the anime left off. This way, you experience the full story. Then, sprinkle in the movies and special episodes whenever you feel like taking a break from the main storyline but still want a One Piece fix.
