I met Ed Boon at a convention, and he said the heights are just designed to look good in fights. So take any specific numbers with a grain of salt.
Liu Kang is 5'10", while Sonya Blade is around 5'9".
Scorpion stands around 6'2", while Sub-Zero is about 6'0". A lot of the characters are in the 6-foot range, but Goro towers above them all at a whopping 8'2"!
