You can only redeem V-Bucks cards online. Go to the Epic Games site, log in, and enter the card code. The V-Bucks will be added to your account, and you can spend them on your Switch.

From my experience, you need to go to epicgames.com, sign in with your Nintendo account, and redeem the code there. Then the V-Bucks will show up in your Switch game!
