Talk to a ship technician in any spaceport, enter the ship customization screen, and pick the research table from the workstations category. It's a cinch!
Adding a research table? Honestly, just hit up a spaceport, talk to a ship builder, and find it under the interior modules.
Easy peasy! Go to your ship's build menu, select the interior, and you'll see a category for workstations. Just plop the research table where you need it!
