You need to access the player customization screen in Diamond Dynasty or Road to the Show, then choose 'Edit Player', and from there, you'll see the option to add secondary positions. Easy peasy!
Adding a secondary position can't be done directly by players. It's determined by your player's stats and versatility during gameplay.
Just hit the player editor, select your dude, and slap on a secondary position. Boom, done!
